Seriously how difficult is the build?

It is very easy to build. But while you're reading about how people threw these things together in an hour or less, you may want to ponder why it takes an experienced tool design engineer (myself) ALL EVENING to build the Ender 2 (smaller, simpler version of the Ender 3). Blissful ignorance can get it built in no-time. Take your time and check every piece for burrs & defects, and make sure everything is perfectly square/flush/aligned/parallel/etc. when building. The rewards are going to be more accurate output from the printer.

Hi. Purchasing for my young granddaughter. will I need to purchase anything else with the unit in order to use it christmas day?

You also need the filament sold on spools. It comes in many colors. The filament is the actual product that is used to make the 3D creation. 

does it come with spool holder for the fillament?

Yes, it has a spool holder that is attached to the top. 

Can you print on both the metal bed as well as the removable plastic bed?

Can you? Sure. Should you? As others have said that'll be the debate. Likely warped indeed as Don noted, but even if you choose to I'd say tape it at the very least so you have some give to work with, but I'd leave the surface on or get glass, it prints pretty well on the surface right out of the box without issue for me, and I've bought 2 of these units

Yes.

What size filament can I use with this?

The stuff product uses the 1.75 mm filament. Any 3D printer can be modified to use the three mm but that requires a much more intimate knowledge of 3D printing machines. 

How real is that certificate if it does not spell "Technology" correctly?

About as real as the paper its printed on.
